Marga-Ouita

photography by Talitha Schroeder

Margaritas are one of Chef Ouita’s favorite drinks but you don’t have to spend 12 hours working in a hot kitchen to appreciate how good this refreshing cocktail is. Honeywood bar manager, Leah Craig, dreams up seasonal variations using local fruit as it shows up in the market. And when blackberries come on, swap them out and keep enjoying!

Ingredients

2 oz blanco tequila
1 ½ oz blueberry syrup
½ oz lime juice
¼ oz lemon juice
Pinch of salt

Directions

Rub lime wheel around part of the glass rim, dip in tajin or salt.
Add ingredients to a cocktail shaker with ice. Shake til shaker tin is too cold to hold. Dump entire contents into prepared glass. Garnish with a lime wheel!

Not everyone’s tastes are the same, adjust as needed!

1 cup water
1 cup sugar
1 cup blueberries

Dissolve sugar and water in a pot. add blueberries. Simmer for 5 minutes. Turn off heat. Cover and let steep til room temp. Smash and strain into a container. Keep refrigerated!
