Papas Bravas y Chorizo

1 pound Yukon gold potatoes, cut into bite-size chunks
8 oz. Alvio’s chorizo, cut into roughly same size chunks
¼ teaspoon baking soda
drizzle of olive oil
Salt

 

Preheat your oven to 450 degrees.
Preheat a sheet pan in that oven.
Cover the chopped potatoes with water, and add the baking soda. Bring to a boil. Cook for 1 minute, then drain.
Toss potatoes with olive oil and salt.
Lay out on the hot sheet pans and put them into the oven for 12-15 minutes. Flip everything, add chorizo and return to the oven another 10 minutes, til crispy brown. Serve while warm with our spiced up, fake aioli (fake-oli).

½ cup mayo of choice
2 teaspoons smoked paprika
Zest of half a lemon
2 teaspoons lemon juice
1 clove garlic, microplaned
Pinch of good salt

Mix it all up while potatoes are in the oven!
