Once upon a time, at Holly Hill Inn, we used to emulate Jules Verne and plan a trip around the world with our guests every winter. It was a way to shake off the winter blues and challenge ourselves to explore new flavors and cuisines.
One of our favorite menus was the food of Ethiopia, where one of our student/dishwashers had emigrated from. We loved watching the injera bubble up as it fermented in the warmth of the kitchen. We blended our own berbere spices and simmered red lentils into stew.
Come join us as we recreate these dishes and other Ethiopian specialties. We’ll try out lip-tingling spice combinations and sample our version of Tej, a honeyed beverage similar to mead. It’ll be a culinary excursion to the Horn of Africa, right in downtown Versailles!

Our classes are designed with adults 21 years and older in mind.

Unless otherwise noted, all classes begin at 6:30 pm and last approximately 2 hours. Doors open at 6:15 pm.
We regret that we are unable to cancel reservations or issue refunds. In the event of an unavoidable conflict (and with 48 hours advance notice) we’re happy to arrange a one-time transfer to another class, pending availability.
