Radish Frittata

Ingredients

1 bunch of radishes (tops & all)
Hearty knob of butter 
Drizzle of olive oil
A few green onions with 2-3 inches of their tops
6 eggs
Salt & pepper to taste
2-4 oz fresh goat cheese or other soft mild cheese

Directions

Remove the radish tops and set aside. Quarter the whole radishes. Heat a tablespoon or so of olive oil in a 10” cast iron skillet over medium heat. Melt a knob of butter, swirl it around the bottom and sides of the skillet and add the quartered radishes. Salt them lightly and pan roast until golden brown and tender when pricked with the tip of a knife.

Preheat the broiler before proceeding with the rest of the recipe.

Whisk the eggs in a bowl with salt & pepper.  Rough chop the radish tops and cut the green onions on the bias.  Add the radish tops and onions to the skillet, followed by the eggs.

Cook over medium heat for 5-7 minutes, running a spatula or flat blade of a knife around the edge a few times.  When eggs appear set around the edge of the skillet, remove it from heat and place under the broiler for a few minutes to set the top, adding the cheese for the last minute or so, just long enough to melt and turn golden.

Garnish with herbs and fresh flowers & serve promptly!
